Ingredients:
- 3 boiled egg yolks
- 1 tbsp yellow mustard
- 1/4 tsp salt
- 1 cup salad oil
- Freshly squeezed lemon juice
- 3 to 4 tbsp gherkins
- 3 to 4 tbsp capers
- 2 to 3 tbsp fresh green herbs like parsley, dill, tarragon, and chives
- 2 to 3 boiled egg whites

- Prepare a bowl and mix together egg yolk, mustard, and salt. Press and stir the ingredients until they become a very smooth paste
- Gradually add salad oil to thicken the sauce, then dilute it with some freshly squeezed lemon juice
- Finely chop the gherkins and capers. Then, put both ingredients into a clean, fine cloth and squeeze to extract their juices
- Beat the gherkin and caper juice gradually into the sauce. Then add herbs like parsley and finally add the egg white and mix well
- Taste and adjust if necessary, and the tartar sauce is ready to be enjoyed as a dip for seafood dishes
