How to Make: Slice the bitter melon, remove the seeds. Put it in a container, add 1 tablespoon of salt, mix well, let it sit for 10 minutes. Rinse with water, set aside. Sauté shallots and garlic until fragrant. Add red chili, dried shrimp, bay leaves, and galangal. Mix well, sauté until the dried shrimp is cooked. Add apricot, sprinkle with salt, sugar, and mushroom broth. Stir and add a glass of water. Cook until desired level of maturity. Serve.
