In this launch event, Chef Devina Hermawan also shared a simple and delicious Chicken Ballotine recipe. Let's take a look at the recipe.
Main Ingredients:
1 whole chicken with skin
1 lemon
Salt
Black/white pepper
Anchor Unsalted Butter for spreading
Complementary for broth:
½ onion
3 cloves of garlic
2 stalks of celery
1 carrot
1 liter water
3 tbsp oil

30 gr smoked beef
½ onion
35 gr champignon mushrooms
1 tsp cajun seasoning
20 gr french bread (baguette)
1 egg
35 gr Anchor Cheddar Cheese
1 tbsp BBQ sauce
½ tsp granulated sugar
â…“ tsp beef broth powder

Salad Dressing Ingredients (Basil Cheddar Vinaigrette):
75 ml lemon juice
6-8 basil leaves
1 tsp mustard
15 gr Anchor Cheddar Cheese, grated
50 ml extra virgin olive oil
¼ clove garlic
Salt
Sugar

45 gr Anchor Unsalted Butter
20 gr all-purpose flour
450 ml chicken broth
50 ml Anchor Cooking Cream
100 gr Anchor Cheddar Cheese, grated
White pepper

Prepare the filling: chop the onion and sauté with a little oil. Set aside. Cut the mushrooms into pieces and sauté with a little oil. Set aside. Then, chop the smoked beef and Anchor Cheddar Cheese, and shred the french bread.
Prepare a mixing bowl, put all the filling ingredients, mix well. Set aside.
Prepare the whole chicken, separate the chicken meat from the bones, save the bones to make chicken broth. Add lemon juice, salt, and pepper to the chicken meat.
Fill the chicken meat with the filling ingredients, cover and tie with a string.
Place the chicken in a baking pan, then spread the chicken with Anchor Unsalted Butter. Add a little salt and pepper, spread evenly over the entire surface of the chicken skin.
Bake the chicken for 40 minutes or until cooked, then flip and bake for another 10 minutes (baking time may vary depending on the oven).
Chicken broth: heat a saucepan and add 3 tbsp of oil. Add the chicken bones, garlic, celery, and carrot. Sauté for a moment, then pour in the water. Cover the pan and cook over low heat. Set aside.
Sauce: prepare a saucepan, melt Anchor Unsalted Butter and add all-purpose flour. Cook for a moment, then pour in the chicken broth and Anchor Cooking Cream. Finally, add the grated Anchor Cheddar Cheese and white pepper. Stir well. The sauce is ready to use.
Salad dressing: finely chop the basil leaves and garlic. Prepare a bowl, mix lemon juice, basil leaves, and garlic. Gradually pour in the extra virgin olive oil while stirring, then add the remaining ingredients. Stir well.
Serve Chicken Ballotine with sauce and salad.
