"How to Make:"

Prepare beef shank or offal. Then put it in a pot, add water and boil until tender. Next, remove the meat from the pot and cut it into squares or cubes, set aside. The next step, take the remaining broth and boil it together with tajin water or rice washing water.

While waiting for it to boil, prepare the ground spices by mixing all the ingredients starting from garlic, shallots, galangal, candle nuts, lemongrass, coriander, pepper, and cumin. Then, heat the oil in a pan, sauté the ground spices until fragrant. Remove the sautéed ground spices and put them into the boiling beef broth and tajin water. Stir well, let it boil.

"Season the soup mixture of beef broth and tajin water with salt and seasoning. Stir well, taste and adjust if necessary, then turn off the heat. Finally, for the serving stage: prepare a bowl, arrange the meat pieces in it. Then, pour coto Makassar soup over it. Add sliced green onions, celery, and fried onions on top."
