Kikil is a part taken from a cow's foot. This part is widely used as an ingredient in various dishes, ranging from soups, stir-fries, to grilled dishes. If you want to make yellow broth kikil, quickly check the recipe.
Ingredients: 250 grams of cow's trotters, 20 grams of dried anchovies, 3 cherry tomatoes, 500 ml of coconut milk, 250 ml of water, 2 tablespoons of tamarind water, ½ teaspoon of cumin powder, 1 teaspoon of salt, ¼ teaspoon of seasoning, 1 tablespoon of oil (for sautéing), 1 stalk of lemongrass (bruised), 1 sheet of kaffir lime leaves, ¼ teaspoon of ground pepper, 4 red chili peppers (sliced diagonally).
Fine Spices: ½ red ginger rhizome, 3 cloves of garlic, 5 grains of shallots, 2 grains of candle nuts (roasted), 1 cm galangal, 2 cm turmeric.
How to Make: Prepare a pressure cooker, boil cleaned cow's trotters for 1 hour, remove and drain. Pound all the spices until smooth. Add the ground spices to hot oil and sauté until dry. Add water, coconut milk, and other seasonings, adjust the taste. If the taste is right, add the cow's trotters and stir continuously to prevent the coconut milk from splitting. Cook until the broth thickens, then remove from heat. The dish is ready to be served with boiled young cassava leaves and green chili sambal.

How to Make: Boil the kikil together with grated ginger, boil until cooked and there is no fishy smell. Heat the oil, sauté all the ground spices until fragrant. Add bay leaves and galangal, stir until well mixed. Add kikil, stir until well mixed then add coconut milk, sugar, and salt, stir until cooked.
After it is cooked, turn off the stove. Once it has cooled down, skewer the kikil using satay skewers and grill until it is cooked and browned. Serve the kikil satay together with the remaining cooked spices. The dish is ready. Source: Diadona.id
