Dough Ingredients Cireng: 225 grams of tapioca flour / kanji 75 grams of wheat flour 1 stalk of spring onion (take the green part, finely sliced) 150 ml of water 1 teaspoon of chicken broth ½ teaspoon of white pepper powder 1 teaspoon of salt
Ingredients for Ground Spices: 6 cloves of garlic, 5 cm of lesser galangal, 8 red bird's eye chili peppers, ½ teaspoon of salt, 1 teaspoon of granulated sugar. Spicy Shredded Chicken Ingredients: 200 grams of chicken breast fillet (steamed, then shredded), 70 grams of chopped carrots, ½ teaspoon of granulated sugar, ½ teaspoon of salt, 1 stalk of scallion (thinly sliced).
How to Make Spicy Chicken Filled Cireng: First, make the spicy chicken filling. Heat oil in a pan, then sauté all the finely ground ingredients. Sauté the finely ground ingredients until fragrant, mix well and add the steamed and shredded chicken. Mix well. Add carrots, chicken broth, and scallions. Stir until the spices are absorbed, remove from heat and set aside.
Then make the cireng dough by heating water over medium heat in a pot. Add chicken broth, salt, and pepper. Stir until the seasonings dissolve. Then, gradually add some tapioca flour or cornstarch while continuously stirring quickly. Stir continuously until the dough thickens, then remove from heat. Let the cireng dough sit for a while until it is not too hot. Then, gradually add the remaining tapioca flour and wheat flour into it. Mix evenly with a spatula. Add green onions to the cireng dough, then continue kneading with hands until it feels easy to shape.
Stick the dough at the end by pressing it until it sticks. Repeat the steps of shaping this cireng until the dough runs out. Prepare a pan, fill it with plenty of oil. Then, put in several cireng to fry. Fry the cireng in several stages until cooked and the outer skin feels crispy. Lift and drain.
