Omelette itself usually has a smooth and creamy taste. However, omelette can be prepared with a fresher taste, such as Thai-style egg dishes. The way to prepare it is also easy by adding a source of protein and kitchen spices that are easily found in the market. How to make it? Check out the recipe from Chef Luvita Ho below.
Ingredients for sauce topping: 1 clove of shallot, 2 cloves of garlic, 2-3 bird's eye chilies, 2 tablespoons of cilantro stems, cilantro leaves without stems, 2 tablespoons of fish sauce, 2 tablespoons of coconut sugar or Javanese sugar, 1/2 squeezed lime. Ingredients for omelette: 3 eggs, 2 curly chilies, 1 stalk of spring onion, 1 teaspoon of soy sauce, salt, pepper, 100 grams of peeled shrimp, cooking oil.
Step 1: Finely chop garlic, shallot, bird's eye chili, and cilantro leaves. Blending the sliced ingredients will make it easier to mix with the eggs and will not damage the texture.
Mix chopped garlic, shallots, bird's eye chili, and cilantro with fish sauce, palm sugar, and lime juice. Stir well. Let it sit for a while if you want a stronger taste.
Crack the eggs and pour them into a bowl. Mix with sliced curly chili and spring onions, soy sauce, salt, and pepper. Add peeled shrimp and beat lightly.
Heat a large amount of oil. Pour the egg mixture and let the bottom cook thoroughly, then flip. Make sure the omelette is fully cooked on both sides to resemble a typical Thai dish.
Lift the eggs and serve them on top of warm rice to make it more delicious. Add the evenly mixed sauce mixture beforehand as a topping. This way, the omelette will taste fresher. Especially when combined with peeled shrimp topping.
