In the Thai Tea Crème Brûlée Donuts, the touch of Thai Tea provides an exotic aroma and flavor to the soft and fluffy donuts. Here is a simple recipe to create Thai Tea Crème Brûlée Donuts at home.
Step 1: Making Thai Tea Concentrate
Ingredients: Thai Tea Milk Condensed Sweetened Milk How to make: Heat 750g of milk and 80g of Thai tea until it boils lightly. Remove from heat and let it cool. Strain the tea leaves. This should yield about 400-500g of condensed milk (ideally around 480g).
Step 2: Pastry Cream Thai Tea
Ingredients: 480 g Thai tea milk (concentrate) 75 g sugar 1 g salt 4 large egg yolks 45 g cornstarch 3-4 tbsp butter How to make Pastry Cream: Combine Thai tea milk, sugar, salt, egg yolks, and cornstarch in a saucepan. Heat the mixture over medium heat while continuously stirring until it boils and thickens.
After thickening, add butter and stir until smooth. Cool the pastry cream in the refrigerator before using.
Step 3: Make Donuts and Caramel/Crème Brûlée Topping
Ingredients: 200 g (1 cup) sugar, 1/4 cup water How to Make: Mix cold Thai Tea and active yeast in a large bowl. Let it sit for a few minutes until the active yeast starts to foam. Add sugar, salt, eggs, and melted butter to the Thai Tea and yeast mixture. Gradually add flour while stirring continuously until the dough becomes smooth and can be shaped.
After it has risen, roll the dough on a surface that has been dusted with flour. Cut the dough into donut shapes using a cup and make a hole in the middle using a bottle cap. Heat oil in a pan. Fry the donuts until golden on both sides. Mix sugar and water in a saucepan. Heat the mixture over medium heat without stirring until the sugar dissolves and turns into golden caramel.
