How to Make: In hot oil, sauté shallots, garlic, and thinly sliced chili. Also add ginger, galangal, bay leaves, and lemongrass. Sauté all the ingredients until fragrant. Once the spices are fragrant, add the chicken. Stir briefly until the chicken is evenly mixed with the spices.
