Dream - Have you ever tasted balakutak, Dream friends? Balakutak is a special term for squid, a seafood dish that is similar to squid but has stronger bones. This dish usually consists of squid cooked with traditional seasonings that pamper the taste buds.
Squid balakutak is a typical food from Cirebon, West Java, which is famous for its unique and delicious taste. Many people try to cook it but the results are not satisfying. Processing squid and cuttlefish indeed requires knowledge of the technique. This is to ensure that the dish is not fishy and has a tender texture.
Friends of Dream can try the recipe for cumi balakutak given by Chef Martin Natadipraja through his Instagram account @martinpraja. In cooking cumi, Chef Martin has his own specific technique.
"He cooks squid using a timer and only needs to be cooked over the fire for 7 minutes. This is to ensure that the squid is cooked inside out, but not tough. '7 minutes is the perfect timing,' he wrote, giving tips to one of his followers on Instagram. Do you want to try cooking this squid balakutak at home? Here is the recipe from Chef Martin."
The first ingredients: - 10 shallots- 2 cloves of garlic- 7 red bird's eye chilies- 1 tsp shrimp paste- 4 tbsp oil
The second ingredient: - 500gr medium-sized squid (keep the ink sac) - 5 pieces of kaffir lime leaves - 1 lemongrass - 3 galangal - 100ml water - 1 tsp salt - 1 tsp mushroom broth - ½ tsp sugar
- First, clean the squid by washing it thoroughly, remove the tough back part and do not discard the ink. Next, cut the squid into small pieces.
- Then, finely grind all the first ingredients such as garlic, shallots, bird's eye chili, and shrimp paste according to the measurements using a blender or similar tool so that they are evenly mixed.
- Stir-fry the finely ground spices together with lime leaves, lemongrass, and galangal until cooked. - Next, add the squid and a little water, then cook until the squid shrinks. Make sure that the ink is still present, yes, Sahabat Dream.
- After that, you can add seasonings such as salt, sugar, and mushroom broth until a delicious aroma is smelled. However, do not cook for too long so that the result does not become tough.
- After cooked, Sahabat Dream can serve squid with freshly cooked rice. Watch the video here. Report by Amanda Syavira.
