Squid is often cooked by deep-frying it with flour or made into sweet and sour sauce. However, if you feel bored with the same old squid recipe, this time Sahabat Dream can try making it differently by attempting the Fried Squid with Galangal and Sambal Rampai recipe.
• 1 kg squid • 15 cloves of shallots • 8 cloves of garlic • 2 turmeric roots • 6 roasted candlenuts • 1 tablespoon coriander • 300 grams of young galangal • 2 teaspoons of salt • 2 teaspoons of mushroom broth • 1 teaspoon of white pepper • 1 teaspoon of chicken broth
• 15 pcs red chili peppers • 4 pcs shallots • 10 pcs cherry tomatoes • 2 tsp roasted shrimp paste • 1 tsp seasoning • 2 pcs kaffir lime
1. Burn turmeric and roast candlenut and coriander first so that the aroma of these two spices comes out more.
2. Mince the garlic, shallots, roasted turmeric, roasted coriander, roasted candlenut, and add a little oil into the blender. Make sure all the ingredients are well mixed and finely ground.
3. After the spices are ground, put them into a container and mix them with finely ground galangal. Add salt, mushroom broth, and chicken broth to the mixture, then stir all the spices evenly in one container.
4. Then marinate the squid with the previously made seasoning for 1-2 hours.
5. After being marinated, pierce all the squid using toothpicks. Insert the squid's head into its stomach so that it looks full and thick. Then, slice the top part of the squid's body so that the seasoning can penetrate well.
6. Fry all the squid when the oil is hot. After cooked with a brownish color, lift the squid and drain the oil.
1. Crush shallots, salt, bird's eye chili, and ripe tomatoes using a mortar and pestle. 2. After that, add roasted shrimp paste into the prepared sambal. 3. To add extra freshness, you can also squeeze lime into the sambal.
