On the other hand, vegetable oil, depending on the type, is also rich in monounsaturated or polyunsaturated fatty acids that provide similar benefits in lowering LDL cholesterol and increasing HDL cholesterol, as well as providing anti-inflammatory effects.

For comparison, corn and soybean oil have a smoke point of 450 degrees Fahrenheit, while olive oil ranges from 350-410 degrees Fahrenheit for EVOO and 390-470 degrees Fahrenheit for processed olive oil.
Profile of Taste: Olive oil, especially Extra Virgin Olive Oil (EVOO), has a distinctive taste profile, ranging from fruity to spicy, with hints of green and earthiness. On the other hand, vegetable oil is considered neutral without any distinctive taste, so it does not affect or alter the taste of food.
Vegetable oil is more suitable for high temperatures such as frying, while processed olive oil can be considered. For baking at medium temperatures, both olive oil and vegetable oil can be used, although the former will provide more flavor. Vegetable oil is generally recommended for baking to avoid adding a specific taste.
