How to make oseng tahu telur:
1. Chop the garlic and crush the tofu until it has a slightly coarse texture. You can crush the tofu with a fork to make it easier to create a coarse texture.
2. Heat the oil and let it heat up.
3. Add the crushed tofu and a pinch of salt and pepper. Do not stir and let it sit for 5 minutes.
4. Flip the tofu once it has turned brown and pour in the beaten eggs. Stir until the eggs are scrambled.
5. In the same pan, sauté the garlic until fragrant.
6. Add the oyster sauce and sweet soy sauce. Add chili sauce or chili powder if you want to add a spicy taste.
7. Serve the oseng tahu telur with warm rice and scallions as toppings.

- 4 curly chili peppers
- 7 bird's eye chili peppers
- 7 shallots
- 5 cloves of garlic

- 1 thumb-sized galangal
- 2 stalks of lemongrass
- 4 bay leaves
- 4 kaffir lime leaves
- 1 tomato
- 6 cloves
- 1 tablespoon of coriander
- 2 star anise

How to Make:
- Make a smooth seasoning using curly chili peppers, bird's eye chili peppers, shallots, garlic, candlenuts, ginger, and nutmeg
- Sauté the smooth seasoning along with the additional seasonings such as sliced onions, galangal, lemongrass, bay leaves, kaffir lime leaves, sliced tomatoes, cloves, coriander, and star anise until fragrant
- Add 7 pieces of chicken thighs and add enough water. Add sweet soy sauce according to taste
- Add potato pieces and add 1 teaspoon of chicken broth powder, 1/2 teaspoon of pepper, and 1 tablespoon of oyster sauce
- Once the chicken thighs and potatoes are half cooked, add 5 boiled eggs and add more sweet soy sauce. Wait until the broth thickens
- Serve on a plate and garnish with a little chopped scallions on top
- Chicken egg stew is ready to be enjoyed with warm rice
