How to Make Sticky Rice Lupis Without Lime: The first step, make the brown sugar sauce first. Prepare a small saucepan, finely grate the brown sugar into it. Add water and a pinch of salt, then cook the brown sugar sauce while stirring continuously. This process is to completely dissolve the sugar and there are no lumps. Then, add the cornstarch that has been mixed with a little water. Stir continuously until the brown sugar sauce thickens, turn off the heat, set aside. The next step, make the sticky rice lupis cake. Soak the sticky rice for about 1-2 hours, then wash it thoroughly.

Prepare banana leaves, shape them into triangles. Fill the banana leaves with a sufficient amount of soaked sticky rice. Attach toothpicks to the banana leaves to secure them during boiling. Repeat this process until all the sticky rice is used. Prepare a steamer pot and bring it to a boil. Then, place all the sticky rice wrapped in banana leaves into the steamer.

Steam the glutinous rice cake for approximately 1-2 hours. This is to make the texture perfectly chewy due to the absence of the use of slaked lime. Once it is cooked, remove the glutinous rice cake and drain it first. Next, prepare the grated coconut topping. Mix the grated coconut with 1/2 teaspoon of salt, then steam it for 10 minutes. Remove the glutinous rice cake from the banana leaves. Then, sprinkle it with the steamed grated coconut.

Place the glutinous rice lupis cake on a serving plate, and drizzle it with brown sugar sauce. You can also serve the sauce separately to be dipped. Besides the triangular shape, you can also shape the glutinous rice lupis cake like lontong. Therefore, it can be sliced into rounds and served. Source: Diadona.id
