How to Make: Grind the spices, then sauté until fragrant and add the ground dried chili. Add the lime leaves, salt, sugar, seasoning, and soy sauce. Once the chili oil is cooked, remove from heat and set aside. Boil water, cook the flat rice noodles until cooked. Once cooked, remove from heat and drain. How to Make: Heat a little oil, sauté finely chopped garlic until golden brown with low heat. Add Japanese soy sauce, saun nanban, sesame oil, and chili oil to taste. Stir until well blended. Add salt, pepper, and seasoning to taste. Stir well. Adjust the taste, add more seasoning if necessary. Stir well and set aside. Boil the kwetiau in boiling water until cooked, remove and drain.
