Recipe Fried Chicken with Javanese Tamarind Sauce

Ingredients for Javanese Tamarind Sauce: 3 tbsp vegetable oil, 5 cloves of shallots (coarsely chopped), 1 clove of garlic (finely chopped), 5 dried red chilies (cut into pieces), 1/2 tsp ground pepper, 100 ml Javanese tamarind water, 1 tsp granulated sugar, 1 tsp salt.

How to Make: Step one, cut the chicken into 3 pieces. Then, set aside the pointed end. This separated part can be used as an ingredient for making broth. Next, wash the chicken that will be used to make Javanese-style fried chicken with tamarind sauce. Drain. Marinate the chicken, coat the chicken pieces with spices. Such as, pepper, garlic, mushroom broth. Coat the chicken evenly, and let it sit for about 15-30 minutes for the spices to fully absorb.

Prepare wheat flour and coat it thinly on the chicken. The chicken is ready to be fried. Then, heat frying oil in a pan and fry the chicken that has been coated with wheat flour until cooked. Make sure the color changes to yellowish-brown, then lift and drain first. Fried chicken is ready, now proceed to the process of making Javanese tamarind sauce.

Start by heating the oil, then sauté the chopped red onions and garlic until wilted and fragrant. Add the chopped dried red chili, pepper, sugar, salt, and tamarind water. Mix well and let it boil until the sauce thickens and reaches the serving stage.

To present Javanese sour fried chicken, it can be done in several ways. You can simultaneously put the chicken in the Javanese sour sauce that you made and mix it evenly at the same time. However, if you want a more beautiful presentation, prepare a serving plate and place the chicken pieces on top.
