Dough ingredients (for 20 pcs): 250 gr chicken thigh, 5 cloves of shallot, 2 cloves of garlic, 1 stalk of scallion (sliced), 4 red curly chili peppers (sliced), 5 pieces of kaffir lime leaves (sliced)
2 eggs 100 gr tapioca flour 40 gr wheat flour 1 tsp salt ¼ tsp pepper 2 tsp granulated sugar 2 tsp chicken broth powder Thai-style dipping sauce ingredients: 3 stalks of coriander leaves 4 cloves of garlic 20 green bird's eye chilies 3 tbsp halal Bangkok sambal 1 tbsp fish sauce 2-3 tbsp lime juice 2 tbsp water
1. Prepare a chopper or blender, then put in the chicken, salt, pepper, sugar, powdered chicken broth, garlic, and shallots. Blend until smooth. 2. Add the eggs, tapioca flour, wheat flour, spring onions, curly red chili, and kaffir lime leaves. Blend again until all the ingredients are evenly mixed. 3. Prepare a piping bag or plastic bag, then transfer the sempol dough into it.
4. Prepare skewers, then insert half of the skewer into the pierced plastic end. Remove the sempol mixture while pulling out the skewer. 5. Prepare a pot filled with boiling water, then boil the chicken sempol until cooked. Drain. 6. Prepare a bowl, then add eggs and beat. Dip the sempol into it. 7. Prepare a frying pan filled with hot oil, then fry the sempol until browned. Drain and set aside first.
