1. Chemical Reactions that Produce Flavor Molecules

When freshly cooked, food will undergo a chemical reaction and produce flavor molecules that influence the taste of the food when consumed the next day. According to the Institute of Food Technology in the US, this process can create and enhance flavor compounds in food.

               

2. It Takes Time for Seasoning Absorption

When cooking, there are always some foods that tend to take longer to prepare. This is because of the absorption of spices that require a long time for a more delicious taste.

               

Therefore, the food that you set aside for tomorrow may still undergo the process of absorption and distribution of flavors, making it taste much better than when freshly cooked.

3. Stored in the Refrigerator

It is true that there are chemical reactions that produce flavor molecules, making food more delicious. The opposite will happen if you don't store it in the refrigerator. If left at room temperature, the dish will undergo chemical reactions that lead to spoilage.

               

Therefore, try to store the remaining food that you want to eat tomorrow in the refrigerator, this way the chemical process will slow down, making the food taste fresh and even more delicious. Just like dishes with garlic and onion, they will still blend with the protein and starch when stored in the fridge.

4. Taste in Food Presentation

When it is ripe, it will be easier to recognize the various spices that are put into the food. So, it might make you not enjoy it as much because there are specific spices that you don't like.
