Recipe for Sardine-Flavored Salem Fish

Ingredients: 2 Salem fish 4 cloves of garlic, sliced 5 shallots, sliced 3 red tomatoes, chopped 3 curly chili peppers, sliced 13 bird's eye chili peppers, sliced 1 slice of ginger, crushed 1 slice of galangal, crushed 1 stalk of lemongrass, crushed 3 lime leaves 3 tablespoons of tomato sauce 2 tablespoons of sweet soy sauce Sugar, salt, powdered pepper, and seasoning to taste

               

How to make: Clean the salem fish, season with salt and fry until almost cooked. Heat the oil, sauté the shallots, garlic, chili, galangal, lemongrass, and kaffir lime leaves until fragrant. Add tomatoes, cook until slightly wilted. Add a little water, tomato sauce, soy sauce, sugar, salt, seasoning, and pepper powder. Stir well. Add the fried salem fish, stir well and cook until the seasoning is absorbed. Ready to serve.

Recipe for Presto Salem Fish with Sardine Seasoning

Ingredients: 1 kg salem fish, 500 grams of tomatoes, 6 large red chili peppers, 1 lime, 4 cloves of chopped garlic, 1 onion, cut into 4 pieces, 2 cm of ginger, crushed, 2 tablespoons of shallots, 1 tablespoon of garlic, 4 tablespoons of tomato sauce, 2 tablespoons of chili sauce, 1.5 tablespoons of salt, 1 teaspoon of brown sugar, grated, 4 tablespoons of cooking oil.

               

How to Make: Boil tomatoes and red chili peppers first. Set aside. Clean the salem fish, remove the head. Marinate the fish with lime juice, let it sit for 10 minutes. Then, rinse the fish until clean, set aside. Heat oil, sauté garlic, onion, and ginger until fragrant. Add boiled tomatoes and chili peppers, stir until evenly mixed.

Add fried shallots and garlic, sambal sauce, and tomato sauce. Mix well. Add salt and brown sugar, mix well and cook until done. Put the salem fish in an aluminum container. Pour the prepared sauce, flatten it. Put the container in a pressure cooker that has been filled halfway with water. Cook for 1 hour until the fish and its bones are tender. Ready to serve.
