"Recipe for Sautéed Bitter Gourd"

Ingredients:2 medium-sized bitter gourds (thinly sliced)3 shallots (sliced)2 cloves of garlic (sliced)2 large green chilies (sliced)3 curly red chilies (sliced)1 bay leaf1 cm galangal25 grams of dried shrimp100 ml of waterSalt to taste

How to make: Prepare sliced bitter gourd in a container, then add a little salt and squeeze. Let it sit until slightly wilted. Rinse thoroughly and drain. Heat oil in a pan, sauté shallots, garlic, and red chili. Sauté until mixed, then add green chili, galangal, and bay leaves, stir. Add bitter gourd and dried shrimp. Stir and cook until done. Pour in Oyster Sauce and add water. Stir well, cook until the liquid is reduced. Serve Stir-Fried Bitter Gourd while still warm.

Recipe for Spicy Stir-Fried Bitter Gourd

Ingredients: 200 grams of bitter melon, 2 tablespoons of chili flakes, 2 teaspoons of salt, 3 tablespoons of cooking oil, ½ teaspoon of chicken powder broth, 100 ml of water, 4 cloves of shallot (finely sliced), 3 cloves of garlic (finely sliced), 10 red bird's eye chilies, 1 teaspoon of dried shrimp (roasted), ½ teaspoon of salt, ½ teaspoon of granulated sugar.

               

How to Make: Cut the bitter gourd crosswise into 2 parts. Remove the seeds, then thinly slice it along 0.5 cm. Put it in a container, add salt and knead for 5 minutes. Rinse with water, drain. Heat oil in a pan, sauté the roughly ground seasoning ingredients until fragrant. Add the bitter gourd, mix well. Add chili flakes, chicken broth powder, and water.
