Recipe for Soto Tangkar

Ingredients: - 500 grams of beef (shank/brisket) - 2 tomatoes (cut into pieces) - 3 bay leaves - 12 kaffir lime leaves - 2 stalks of lemongrass (crushed) - 200 ml of instant coconut milk - 6 cm of cinnamon stick - 5 cloves - 1 tablespoon of grated brown sugar - 3 cm of crushed ginger - 1 thumb-sized crushed galangal - Salt - Powdered broth - Granulated sugar - Ground pepper - Water

5 cloves of garlic 10 cloves of shallots 5 roasted candlenuts 1 tablespoon of roasted coriander seeds 3 cm of roasted turmeric 1 teaspoon of cumin 4 large red chili peppers

Ingredients: Tomato, Lime, Scallion, Fried Onion, Sambal, Soy Sauce, Emping

"How to Make Soto Sangkar Bogor"

Boiled Beef Ribs: Boil the beef ribs in boiling water until tender for approximately 60 minutes with low heat. Lift and drain. Set aside the boiled ribs water (broth) for later use. Sauté the Seasoning: Heat the oil in a frying pan. Sauté the ground seasoning until fragrant. Then, add the kaffir lime leaves, bay leaves, lemongrass, cinnamon, cloves, ginger, and galangal until cooked.

               

How to make: Put the beef ribs in a pan with the sautéed spices. Stir until the beef ribs are evenly mixed with the spices. Add the reserved boiled beef broth. Cook until boiling. Pour in the thick coconut milk, stir slowly to prevent the coconut milk from breaking. Cook over low heat while stirring until the broth thickens slightly. Add brown sugar, chopped tomatoes, salt, powdered broth, a little granulated sugar, and pepper. Stir and cook until the meat is tender, adjust the taste. Cook until all ingredients are cooked perfectly.

Serve Soto Tangkar in a bowl. Add fresh tomato slices, pour the meat broth over it. Sprinkle with fried onions and scallions. Add condiments such as lime, chili sauce according to taste, and emping. Source: Diadona.id
