Ingredients: 250 gr black glutinous rice flour 125 ml oil 65 ml coconut milk 175 grams granulated sugar 1 tsp SP 1\/2 tsp baking powder 6 whole eggs
How to make: Mix eggs and sugar and SP for about 15 minutes using the highest speed of the mixer. Reduce the speed to 2. Add flour and baking powder. Reduce the speed to 1, add coconut milk and oil slowly. Grease a 22 cm diameter baking pan with oil. Pour the batter into the baking pan. Tap the pan 3 times. Steam the batter for about 25 minutes, cover the pot with a cloth. Remove and the cake is ready to be served.
Recipe for Baked Black Glutinous Rice Cake 4 Eggs Cup Measurement
Ingredients: 4 egg whites, 1 cup granulated sugar, 4 egg yolks, 2 cups black glutinous rice flour, 1 cup wheat flour, 1 cup cooking oil.
How to Make: Preheat the oven. Mix the egg whites and granulated sugar using a mixer gradually increasing the speed from low to high until the mixture forms soft peaks. Add the egg yolks one by one while continuing to mix at low speed until well blended. Gradually add the flour, stirring until well mixed. Add the cooking oil, stir until well blended. Grease the baking pan with margarine and sprinkle with flour. Pour the mixture into the pan. Bake in the oven at a temperature of 180°C until cooked.
