One good source of nutrition is consuming vegetables that are rich in vitamins, minerals, fiber, and antioxidants. Want to try delicious and healthy vegetable recipes? Here are some recipes that are suitable for nursing mothers.

1. Sayur Lodeh

Ingredients:200 grams of young jackfruit, diced200 grams of chayote, diced100 grams of long beans, chopped100 grams of sweet corn, chopped50 grams of green beans, chopped2 bay leaves1 lime leaf1 stalk of lemongrass, crushed2 cm galangal, crushedSalt to tasteSufficient amount of water

               

Ingredients for Seasoning: 5 cloves of shallots 3 cloves of garlic 3 candlenuts, roasted 1 teaspoon coriander 1/2 teaspoon turmeric powder 1/2 teaspoon cumin powder 1/4 teaspoon pepper powder Salt to taste Sugar to taste Ingredients for Additional Seasoning: 200 ml thick coconut milk 1 tablespoon cooking oil 1 bay leaf 1 kaffir lime leaf 1 stalk lemongrass, crushed 2 cm galangal, crushed Sufficient amount of water

How to Make: Heat frying oil, sauté the ground spices until fragrant and cooked. Pour in thick coconut milk, stir well and cook until boiling. Add bay leaves, kaffir lime leaves, lemongrass, and galangal. Stir well. Add young jackfruit, chayote squash, long beans, sweet corn, and green beans. Stir well. Pour in enough water to cover the vegetables. Season with salt and sugar to taste. Cook the vegetables until tender and the spices are absorbed. Adjust the taste and add water if necessary. Serve the warm lodeh with white rice or ketupat.

2. Sayur Bening

Ingredients: 200 grams of spinach, wash and cut into pieces, 100 grams of carrots, cut into small sticks, 50 grams of sweet corn, peel, 3 cloves of shallots, thinly sliced, 2 cloves of garlic, finely chopped, 1 liter of water, Salt as needed, Pepper powder as needed.

               

How to Make: Boil water in a pot. Sauté sliced shallots and chopped garlic until fragrant. Add carrots and sweet corn, mix well. Pour chicken broth or water into the sautéed mixture, mix well. Add spinach, mix well. Season with salt and pepper to taste. Cook the clear vegetable soup until the spinach wilts and the carrots are cooked. Adjust the taste and remove from heat. Serve the warm clear spinach soup with white rice.

3. Stir-fried Vegetables

Ingredients: 100 grams of carrots, washed and cut into matchsticks, 100 grams of broccoli, washed and cut into small pieces, 100 grams of cauliflower, washed and cut into small pieces, 100 grams of green beans, washed and cut into pieces, 3 cloves of shallots, thinly sliced, 2 cloves of garlic, finely chopped, 1 tablespoon of cooking oil, Salt to taste, Sufficient amount of pepper powder.

               

How to Make: Heat the cooking oil, sauté sliced shallots until fragrant. Add minced garlic, sauté until fragrant. Add carrots, broccoli, cauliflower, and green beans. Mix well. Season with salt and pepper powder to taste. Cook the mixed vegetable stir-fry until cooked and wilted. Serve the warm mixed vegetable stir-fry with white rice. Source: Diadona.
