Ingredients:2 plates of cold white rice (leftover rice is better)1 piece of sweet corn, stripped2 eggs2 cloves of garlic, finely chopped3 cloves of shallots, thinly sliced2 tablespoons of sweet soy sauce1 tablespoon of oyster sauce (optional)Salt and pepper to taste2 tablespoons of cooking oilThinly sliced scallions (for garnish)Crackers and sliced cucumbers (for accompaniment)
Pipil sweet corn and set aside. Finely chop garlic and thinly slice shallots. Prepare cold white rice for easier frying. Heat cooking oil in a pan over medium heat. Sauté garlic and shallots until fragrant and brownish in color.
Shift the spices to the edge of the pan, then crack the eggs into the pan. Scramble the eggs until cooked. Add the corn kernels into the pan, stir well and cook until the corn is slightly cooked and sweet.
Add white rice to the pan, mix well with the seasoning, eggs, and corn. Pour sweet soy sauce and oyster sauce (if using), stir until all ingredients are well mixed. Season with salt and pepper to taste, taste and adjust the flavor. Remove the corn fried rice from the pan and serve on a serving plate. Sprinkle with sliced scallions on top.
