How to Make Traditional Sundanese Pepes Ikan Mas Seasoning: Prepare the ingredients, shallots, garlic, chili peppers, candle nuts, turmeric, lesser galangal, salt, and sugar. Blend, chop, or grind until smooth, set aside. Prepare the ikan mas fish, clean and make cuts on both sides of its body. Then, marinate with lime juice and salt, let it sit for a while, set aside. Take a piece of banana leaf, place the ikan mas fish in the middle. Then, coat it with the ground seasoning. Make sure to evenly coat the ikan mas fish with the seasoning. Then, add bay leaves, kaffir lime leaves, lemongrass, and basil leaves.
