Recipe for Soft Medan Bika Ambon

Dough Ingredients: 350 ml thick coconut milk (heat, because only use 250 ml) 2 stalks lemongrass 3 cm turmeric (mashed) 6 kaffir lime leaves Starter Dough Ingredients: 100 ml warm water 50 grams (4 tablespoons) wheat flour 30 grams (2 tablespoons) granulated sugar 2 teaspoons fermipan

               

Cake Dough Ingredients: 8 egg yolks 2 whole eggs 100 grams of tapioca flour / sago flour 50 grams of glutinous rice flour 1 tablespoon of margarine (melted) 150 grams of granulated sugar (according to taste)

How to Make: Combine the coconut milk mixture, boil over medium heat until boiling. Stir constantly, then strain the mixture when it is cooked. Set aside. Then, mix all the starter ingredients and set aside. Mix the cake mixture, coconut milk mixture, and starter, stir evenly. Cover the mixture with cloth, let it sit for 2 hours. Prepare the baking pan, coat with oil and pour the mixture that has been mixed into the pan. Bake at a temperature of 25 degrees Celsius, lower heat for 40 minutes. Soft Bika Ambon Medan is ready to be served.

Ingredients:300 ml thick coconut milk100 ml thin coconut milk4 pieces of lime leaves, remove the stems2 stalks of lemongrass, crushed1 tablespoon turmeric powder120 ml water50 grams medium protein flour8 grams instant yeast2 tablespoons granulated sugar200 grams granulated sugar100 grams sago flour50 grams glutinous rice flour8 egg yolks2 whole chicken eggs1 teaspoon vanilla powder1/2 teaspoon salt

How to Make: First, make the starter dough by mixing wheat flour, granulated sugar, water, and instant yeast. Stir well, let it sit for 15 minutes at room temperature. Then, make the coconut milk dough by boiling thick coconut milk with thin coconut milk, lime leaves, lemongrass, and turmeric powder. Use low heat, stir until boiling to prevent it from breaking. Next, mix all the main ingredients and stir well.

Add the yeast mixture and stir well, then add the coconut milk mixture, stir and let it sit for 2 hours. After two hours, stir again and pour it into a greased and preheated pan. Bake at 180 degrees Celsius for 35-45 minutes with the oven door slightly open. Check for doneness, remove from the oven and serve. Source: Diadona.id
