"Soft Potato Donut Recipe"

Ingredients: 150 grams of high-protein wheat flour (15 tablespoons), 100 grams of all-purpose wheat flour (9 tablespoons) >> medium-protein wheat flour, 40 grams of granulated sugar (3 tablespoons), 100 grams of steamed and mashed potatoes (weight after steaming) (7 tablespoons), 1 tablespoon of powdered milk, 1 egg, 40 grams of room temperature butter (3 1/4 tablespoons), 1/4 teaspoon of fine salt, 1 teaspoon of instant yeast, 1 teaspoon of granulated sugar, 75 ml of warm water.

               

How to Make: Mix flour, yeast, and sugar and stir well using a spatula. Pour in eggs and milk. Mix the dough using a mixer at low speed. Add mashed potatoes. Stir at high speed until half cooked. Add butter and salt. Knead the dough until smooth. Divide the potato donut dough and let it rest for 15 minutes, covered with plastic wrap. Heat the oil before the donuts proof completely to avoid over proofing. Fry the donuts over medium heat and flip them only once. Potato donuts are ready to be served.

Recipe for Potato Donuts Ingredients: - 500 grams of potatoes - 250 grams of all-purpose flour - 7 grams of instant yeast - 50 grams of granulated sugar - 1/2 teaspoon of salt - 2 egg yolks - 50 grams of unsalted butter, melted - Oil for frying Instructions: 1. Boil the potatoes until tender. Peel and mash them while still hot. 2. In a large bowl, combine the mashed potatoes, flour, yeast, sugar, salt, egg yolks, and melted butter. Mix well until a dough forms. 3. Knead the dough for about 10 minutes until it becomes smooth and elastic. 4. Cover the dough with a clean cloth and let it rest in a warm place for about 1 hour or until it doubles in size. 5. Punch down the dough to release any air bubbles. Knead it again for a few minutes. 6. Roll out the dough to a thickness of about 1 cm. Use a donut cutter to cut out the donut shapes. Alternatively, you can use a round cookie cutter and make a hole in the center. 7. Place the donuts on a baking sheet lined with parchment paper. Cover them with a cloth and let them rise for another 30 minutes. 8. Heat the oil in a deep fryer or a large pot. Fry the donuts in batches until golden brown on both sides. 9. Remove the donuts from the oil and drain them on a paper towel to remove excess oil. 10. Serve the potato donuts while still warm. You can dust them with powdered sugar or glaze them with chocolate or any desired topping. Enjoy!
