Although chicken lemper seems complicated to make, Sahabat Dream can still make it at home using cooking utensils and simple ingredients. Follow Chef Martin Praja's recipe to make delicious, savory chicken lemper that is suitable for breakfast before starting activities.
500 grams of sticky rice 850 ml of coconut milk 1 teaspoon of salt 1 pandan leaf 2 bay leaves 3 kaffir lime leaves 1 stalk of lemongrass 1 teaspoon of garlic powder 1 teaspoon of mushroom broth 1/2 teaspoon of coriander powder 2 tablespoons of sugar 500 grams of shredded chicken Banana leaves
Step 1: Soak glutinous rice for 2 hours beforehand. After that, put the glutinous rice, 600 ml coconut milk, 1/2 tsp salt, and pandan into a rice cooker. Let it cook until done.
Pour 250 ml of coconut milk into a saucepan. Add bay leaves, lime leaves, lemongrass, powdered garlic, salt, mushroom broth, powdered coriander, and sugar. Stir well while cooking until it boils.
Insert shredded chicken into the coconut milk solution. Stir evenly and cook until dry. After that, pour the chicken into a bowl until it cools down.
Prepare the mold and base using banana leaves. Arrange sticky rice in the mold and compact it with a spoon.
Add chicken on top and flatten it again using a spoon. Cover with compacted sticky rice.
Friend Dream can calculate the weight of sticky rice before arranging it so that its thickness is the same on top and bottom.
Remove the chicken lemper from the mold and cut it into several pieces. Use banana leaves to wrap the chicken lemper, then serve.
