How to Make: Boil the beef bones and beef that has been cut into pieces until tender, drain. Do not discard the broth. Boil the beef tendons that have been cut into pieces until half tender with the addition of salt and a little crushed ginger, drain and discard the broth. Rinse the beef tendons until clean with running water to remove any odor. Prepare the ingredients for the spice paste and then blend or pound until smooth. Sauté the spice paste until fragrant with the addition of kaffir lime leaves, bay leaves, and galangal.
Enter the boiled beef brisket and cow's feet, pour in 100 ml of leftover meat broth and 200 ml of plain water. Adjust the taste according to personal preference. Once cooked, remove from heat and serve.
Ingredients: 250 gr cow's trotters, boiled with bay leaves and then cut into pieces, 1 tomato, cut into cubes, 1 piece of ginger, 1 piece of galangal, crushed, 1 stalk of lemongrass, crushed, 1 tbsp grated palm sugar, 1 tbsp sweet soy sauce, 3 bay leaves, 3 torn kaffir lime leaves, 4 cloves of garlic, 6 cloves of shallots, 10 red chilies, 100 gr bird's eye chilies.
How to Make: Grind the ingredients of cabe-cabean, shallots, garlic, and ginger. Prepare a pan and heat the oil. Sauté the ground spices together with tomatoes, galangal, bay leaves, kaffir lime leaves, and lemongrass, then stir well. Cook until it is not raw. Add kikil and season with brown sugar and soy sauce, stir well. Pour in water and season with salt and powdered broth. Cook until the spices are fully absorbed.
