The Llagar de Colloto Restaurant in Spain recently acquired the most expensive cheese in the world through an auction, paying $32,800 (approximately Rp 534,028,280). The cheese in question is Cabrales, a handmade cheese considered to be one of the best in the world. What makes this Cabrales cheese so special that the restaurant was willing to spend such a fantastic amount to own it?
Every year, at the end of August, Las Arenas de Cabrales holds an annual event where the best Cabrales cheese will be auctioned to the highest bidder. This year, Llagar de Colloto, a restaurant in Oviedo, Spain, paid $32,800 (Rp 534,028,280) to win a piece of handmade Cabrales cheese.
Created by the Los Puertos cheese factory from Poo de Cabrales, this 2.2 kg cheese piece was chosen by the jury as the best among fifteen other participating producers in the contest. It also became the most desired cheese in the following auction.
"Restoran Llagar de Colloto in Spain has been the champion in the auction of the best Cabrales cheese for the past few years. In 2018, they paid 14,300 euros (approximately Rp 249,081,939) to win the contest. The following year, the restaurant spent 20,500 euros (approximately Rp 357,085,383) to once again obtain the best cheese. And this year, they once again broke the world record by paying a large amount to acquire the most expensive Cabrales cheese in the world."
Cabrales is a type of natural cheese that is made manually, using raw cow's milk or a combination of milk from cows, sheep, and goats. The production process involves aging and maturing in natural caves in Picos de Europa for several months. The humidity in the caves creates an ideal environment for the growth of mold, similar to penicillin, which gives the cheese its characteristic blue-green lines and spots.
