Ingredients: 200 grams of rice, washed clean1 ½ liters of water2 bay leaves2 stalks of lemongrass600 ml of coconut milk from ½ coconut1 ½ tablespoons of salt200 grams of pumpkin, cut into pieces200 grams of red yam, cut into pieces2 ears of sweet corn, kernels sliced150 grams of spinach75 grams of melinjo leaves5 sprigs of basil, take the leaves

               

Ingredients for Sambal Dabu-Dabu: 6 pieces of bird's eye chili (sliced ½ cm) 3 pieces of red chili (sliced ½ cm) 4 cloves of shallot (thinly sliced) 2 tomatoes, sliced into 1 cm squares 1 tablespoon of lime/lemon juice 1 teaspoon of salt

How to make: Prepare the ingredients for sambal dabu-dabu, grind them using a mortar and pestle, blender, or chopper. Set aside. Cook rice, add bay leaves and lemongrass. Let it soften. Then, add coconut milk and salt. Stir until well combined. Let it boil. Add pumpkin and sweet potatoes, stir again. Continue cooking until the pumpkin and sweet potatoes are cooked. Add sweet corn, spinach, and melinjo leaves. Stir again.

Reduce the fire, then continue cooking the porridge until it thickens. Add basil leaves, stir briefly, and remove from heat. Serve Manado porridge with condiments such as sambal dabu-dabu and spicy skipjack tuna, salted fish, or fried mackerel.
